Southern Zucchini Cheese Bites

Ingredients

  • 2 medium zucchinis
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 eggs
  • ½ cup flour
  • Salt & pepper
  • Oil for frying

Instructions

1. Slice the zucchini
Cut into thin, even rounds so they cook evenly.

2. Build the “sandwiches”
Place a small pinch of shredded cheese between two slices and gently press together.

3. Coat them
Season with salt and pepper. Dip each sandwich in flour, then into beaten egg, making sure all sides are covered.

4. Fry until golden
Heat a pan with a thin layer of oil. Cook each piece for 2–3 minutes per side, until crispy and melted in the middle.

5. Drain & serve
Place on paper towels to remove excess oil. Serve hot—right when the cheese is gooey.
